The origins of this village go way back to the Neolithic period and this is evidenced by the archaeological remains in Peña del Manto. Many other civilizations passed through this town such as the Celtiberians who left behind settlements with pottery and coins. The Romans also settled in Deza when it belonged to Hispania Tarraconensis. It was later invaded by the Visigoths, as we can see by the Visigoth necropolis in Valdecatalán.

However, when Deza was under Muslim control, it gained great importance as it was on the border between the Kingdom of Aragon and the Caliphate, therefore there were many battles there that took the lives of the villagers.

Of its architectonical heritage, it is worth noting its bullfighting ring that could be one of the oldest in the entire province. This bullfighting ring was excavated with picks, and surrounded by natural walls with remains of a horseshoe-shaped tunnel. Other interesting examples of the village’s architecture are the emblazoned homes, as well as the Muslim defensive walls.

In Deza, there is a 16th-century Gothic parochial church dedicated to Nuestra Señora de la Asunción with an incredible 17th-century tower. The major altarpiece is a Baroque representation of the Annunciation and the Adoration of the Shepherds, but the symbol the Dezanos are most devoted to is the Baroque statue of Santo Cristo del Consuelo.

Nowadays, the Town Hall is located in what is called Palacio de los Hinojosa, a palace with a square floor plan, two towers and a two-floored porticoed courtyard with eight round-arched columns.

Another important architectural element is the tower called torreón de Medinaceli that belonged to part of the fortress that was the Duke of Medinaceli’s palace.
