Ritual-Gastronomic Pig Slaughtering Days (El Burgo de Osma)

For more than a quarter of a century this celebration that combines ancient rituals with the best menus takes place on wintry weekends in El Burgo de Osma.

 

Every year, Soria’s traditional pig slaughtering finds its maximum expression both touristic and gastronomic thanks to Hotel Virrey Palafox (+34 975 341 311).

 

At the restaurant’s doors, this ancestral task is carried out in February and March during the Ritual-Gastronomic Pig Slaughtering Days that combine tradition and celebration with lean meat, sirloin, black pudding, minced meat, chorizo and a never-ending list of dishes where the pork is the main star.
